Apple Cinnamon Whole Wheat Pancakes

Perfect for a weekend morning. Made with whole grain flour, this batter can be used to make delicious apple cinnamon pancakes. They are easy to make and fluffy and light. Top with your favorite fruit syrup from the recipe below and enjoy!

Cook time: 30 min
Total time: 40 min
Yield: 4-6 servings

Ingredients:
2 cups whole wheat flour
3 tsp baking powder
1 tsp salt
1 Tbs brown sugar or honey
2 eggs

2 cups milk
1/2 cup vegetable oil
1 tsp cinnamon powder
1/2 cup apples, grated


Directions:
1. In a medium bowl combine the flour, baking powder, cinnamon, salt and sugar.

2.In a separate bowl beat eggs, oil and milk with an electric mixer. Add the dry ingredients to the wet and mix well. Fold in the grated apple and combine.

3. Add oil to the warm skillet. Pour batter by the spoonful, approximately 2 tablespoons onto the skillet. Cook on medium-high heat for 3 minutes or until golden, flip and cook the other side for 1 minute. Repeat until all of the batter has been used.

Easy Fruit Syrup

2 cups fruit of your choice (peaches, raspberries, blackberries, apricots, blueberries...)
1 cup unrefined sugar
1 cup water
2 Tbs cornstarch + 1/4 cup cold water

In a small saucepan bring fruit and sugar and water to a boil. Mix cornstarch with the 1/4c cold water and pour it into the boiling fruit while stirring. Boil for 1 more minute, remove from heat and let cool for 10 minutes. Serve with pancakes for a luxurious breakfast.
