LICKIN' NO CHICKEN SOUP
This soup has incredible flavour and is comparable to the well known chicken soup, but without the chicken!
Great for a vegan or vegetarian diet.
Serves 6- 8
Ingredients:
1Tbsp olive oil
1 onion, diced
3 cloves garlic
6 cups water
3 cup buttercup squash (finely grated)
1/4 tsp allspice
1 cup coconut milk
1 1/2 cup short grain brown rice
2 carrots grated
2 tsp salt
Preparation:
Mince onion and
garlic.
In a large pot add the oil and saute the onions on medium-low heat until the onions are transparent. Add water, salt, allspice, garlic, carrots, butternut squash, coconut milk and rice. Bring to a boil, and then cover and simmer on low heat for 30 mins.
Serve this amazing "no chicken soup" while still warm.
