EASY PASTA
SALAD
Ingredients: 1/2 red onion, diced (optional) Preparation: In a medium saucepan pour 8 cups of water. Add pasta and bring to a boil, turn down to simmer, after 5 minutes add the frozen corn and frozen peas, cover and cook for another 5 minutes. While the pasta, corn and peas are cooking prepare the sauce. In a large mixing bowl combine the olive oil, mayonaise, garlic and salt. Mix well. When the pasta is finished remove from heat and strain. Add the pasta, peas and corn to the mixing bowl with sauce , add the grated carrot and onion and toss until well mixed.. You can either serve this dish warm, or
on a warm day you might choose to refrigerate for 1 hour and serve as a cold pasta salad.
