Easy Ratatouille

Ratatouille originated in the south of France. It contains the vegetables that would likely be found in a summer garden, as well as the fresh herbs to season with. The classic French ratatouille recipe features zucchini, eggplant, tomatoes, bell peppers, onions, garlic and herbs. It is delicious served over pasta. Or for a traditional Provencal meal, simply enjoy it with a loaf of French bread.
 

Prep time: 20 min
Cook time: 1 hour
Total time: 1 hour 20 min
Yield: 4-6 servings

Ingredients:
2 onions
1 zucchini
1 eggplant
1 yellow pepper
2 cloves of garlic
1 14oz (398 ml) can of chopped tomatoes
1 14 oz (398ml) can kidney beans
1 14 oz (398ml) can navy beans
6 Tbs red wine
4 Tbs. tomato sauce
1 tsp basil
1/2 tsp oregano
1/2 tsp thyme
3/4 tsp sea salt
freshly ground pepper


Directions:
1. Preheat oven to 350 F (180 C).

2. Remove the seeds from the pepper and slice into wedges. Slice the onion, zucchini, and eggplant into wedges. Slice the garlic into thin pieces.

3. In a large oven proof casserole dish combine the chopped tomatoes, tomato sauce, red wine, beans, salt, thyme, oregano and basil.

4. Add the vegetables, mix well and cover. Cook for 1 hour.

5. Serve warm over pasta for a wonderful meal.
