If connectivity is not possible directly between peers for any reason, Syncthing will fall back to using a relay server.
However, since Syncthing uses end-to-end encryption, these relay servers should not be able to see what data you are relaying through them.
Is Syncthing secure?
As already noted, Syncthing is very private, as data is saved directly to a location of your choosing. No third parties need be involved.
